Long & Hot Soup with Bok Choy
2 tbsp Extra virgin olive oil
1 Large head of Chinese lettuce Bok Choy
8 oz Chicken breast cut into thin strips or chicken wings
8 cups Chicken broth
2 tbsp Soy sauce
2 tsp Minced fresh ginger root
12 Green onions chopped
1 tsp Cayenne
4 tsp Chopped garlic
2 Sprigs of rosemary or parsley
68 Dry Chinese noodles optional
Sea salt to taste
Using a large wok or pot heat oil over medium heat. Add cabbage and chicken; fry until chicken is no longer pink inside, approximately 10 minutes. Make sure to stir your cabbage and chicken while it is frying.
Add chicken broth, soy sauce, ginger and bring to a boil. Reduce heat to low; simmer 20 minutes, stirring occasionally.
Stir in onions. Cook until tender, about 4 minutes. Add optional noodles 3 minutes before serving Garnish with additional herb sprigs. Servings: 8
